I show my first smoke with the Bradley smoker. There are a couple of vids on here but none really go in depth, so I show the details to help you decide if this thing is for you. (If you cook pork and don’t buy one, you’re crazy.)

I’ve been cooking with smoke for 20 years…once you taste food cooked with a smoke flavor, you can’t go back to the regular stuff. I started with a smoker box for my gas grill using soaked wood chips and chunks (still use it every time I grill). Grills are good for cooking hot but not so good for low and slow bbq for pork, so I tried a side fire box smoker BBQ. LOT’S of work trying to keep the temperature even and stoking it with wood every hour. I have now graduated to the bradley smoker. I’ll be giving my side fire box smoker away…the bradley is AWESOME! I researched it online and registered on their forum (http://forum.bradleysmoker.com/) Super nice, helpful people on there. Any questions get solved right away and they have great recipie ideas on there as well. there was one for jalapeno peppers smoked with creme cheese that should be illegal it was so good. I post as fatandugly on their forum (and in real life too!)

The Bradley makes it so easy to keep your temperature level and the smoker unit puts out CLOUDS of delicious smoke to flavor whatever you are cooking. If you cook pork, this thing is a dream machine. I just did my second batch of ribs and sausages and did a pork butt…WOW! Used oak smoke and the butt shredded right up when hand pulled…beyond delicious. people were fighting over it at work when I took some in to share. Top restaurant quality with no problem. My wife is a trained gourmet cook and was making crazy dishes with the pulled pork…breakfast smoked pork tamales for example. Heaven! Plug it in and get ready for some good eating.

Directions
For Lemon Layer:
Ingredients
• 1 (18.25 ounces) box lemon cake mix (recommended: Betty Crocker)
• 1 stick butter, softened
• 1 egg
For Top Layer:
• 16 ounces cream cheese (recommended: Philadelphia) softened
• 1/3 cup sugar
• 1 (3-ounce) box lemon or lime gelatin (recommended: Jell-O)
• 2 eggs
Set up grill for indirect cooking over medium heat. (No heat source under cookies). Spray 9 by 13-inch foil pan with cooking spray and set aside.
For lemon layer:
In a large mixing bowl, beat with an electric mixer on low speed the cake mix, butter, and egg until well combined and smooth. Press cake mixture evenly into prepared pan; set aside.
For top layer:
In a medium mixing bowl, beat cream cheese, sugar, and lemon or lime gelatin on medium speed until creamy. Add eggs and beat until smooth.
Spread cream cheese mixture over cake layer. Place foil pan in a second foil pan for stability and insulation. Place on hot grill away from heat. Cover and bake 40 to 50 minutes. Rotate pan halfway through baking. Remove from grill and cool completely before cutting into squares.
Indoor:
Preheat oven to 350 degrees F.
Spray 9 by 13-inch baking pan lightly with cooking spray; set aside. Prepare cake layers as directed above. Bake for 40 to 45 minutes or until cake barely start to pull away from sides. Cool completely before cutting into squares.
