I have a favorite Chinese Recipe I want to try and the provider said one of the secrets of chinese cooking is using a Wok that will cook at around 900 degrees to sear the food quickly.

I have an electric stove top at home…any ideas how to get that temperature using a wok? Is there a ‘Wok Grill’ set that would allow me to reach that temperature or something like convection, etc?

Also does anyone know how hot a typical gas outdoor grill gets? Maybe I could use that?

You will not get that type of temperature from a home stove.
The best you can do is to heat your wok, add oil and fry in small batches.
Even your grill outside will not reach a 900 degree temperature.
Chinese restaurants have special burners that allow the higher temperatures the are able to get.
Just do your stir fry in small batches.
Use peanut oil it is able to handle the higher temperature better than other oils.

    Electric stove? 900ºF? Ain’t gonna happen. Many Chinese restaurants use a little flame-thrower-looking thing to set the wok on… kind of like a jet engine! NO WAY to duplicate that at home.

    If you had a high-output BTU gas burner, you might could mimic it. But short of using propane outside, I dont’ see it happening.

    Maybe use a wok that has a temp gage on it. Call your outdoor grill company to find out how hot your grill gets. Your oven rather it is confection or not has a gage on it that you set that tells you how hot it gets. Duh… Think you should recheck your recipe for the correct temp.

    Most ovens or stoves aren’t meant to get that hot! You might as well throw the food straight into the fire.
