What about if I put a cookie cooling rack wth little "feet" to raise it off the griddle on it and "grilled" veggies on it, would that work OK?

I don't see why it wouldn't work. After a griddle is a type of grill. I wouldn't recommend using a cookie rack. Just set the veggies on the griddle with a little bit of oil and you should be fine.

    I don't think an electric griddle will produce enough heat to do what you want. Try using the broiler in your oven. Roast your veggies in the normal oven until they are tender, then if they aren't as brown as you'd like, turn the broiler on for a few minutes and they should be nice and brown!

    Not as good, but you can put the veggies directly on the grill surface, just oil lightly with EVOO.
